Dolcetta is made by processing and deboning the pork leg immediately after slaughter and it is matured already open. This process allows to obtain a raw, seasoned product, in a tile-type format, with the advantage of keeping the slice whole from start to finish. Once maturation is completed, Dolcetta ham is prepared in different formats such as “Mattonella”, “Squadrata” and “Rustica”. For use in gastronomy at the counter it is available whole with or without rind, with pepper and chilli. Formats are optimized to minimize waste and maximize yield, offering a variety of options to suit every need and budget.
